Kitchen Equipment You’ll Need

  • Mixer with dough hook attachment
  • Rolling pin
  • Baking tray
  • Parchment paper or baking sheet

Yield: 490g of crackers approximately

Ingredients

  1. 375 g whole wheat flour
  2. 220 g water
  3. 1 tsp salt
  4. 70 g olive oil ( or any neutral vegetable oil)
  5. 1 tsp garlic powder ( or garlic paste) *( Optional )
  6. 1 tsp Dried oregano ( preferred fresh )
  7. Extra water or brushing and black sesame for seasoning.

Method

  1. Combine all ingredients in a mixer bowl except water and oil. Slowly add water and oil while mixing and with a dough hook, knead it on medium speed for 5-6 minutes. The dough should be firm. If your dough is sticky dust little flour.
  2. Cut the dough into 5-6 pieces and create palm-sized balls. Lightly apply oil and cover it. Leave it to rest for 30 minutes at room temperature.
  3. Preheat the oven at 200°c. Prepare a baking tray with parchment paper or a baking sheet.
  4. Flatten the dough ball using a rolling pin until thin. But not too thin to burn. With a knife or pizza cutter cut any shape or size. You can also use a cookie-cutter.
  5. Carefully arrange all the cracker pieces on the baking tray or a baking sheet. Poke holes with a fork to avoid bubbles and puffs. Gently brush water over the cracker pieces and lightly season them with salt and black sesame. 
  6. Bake at 200°c for 10-12 minutes, until they’re golden brown and crispy.  Allow it to cool before serving. Repeat the same process for the remaining dough.
Tips
  1. Keep an eye on your crackers while baking. They may burn quickly if left unattended for an extra minute. It’s okay to remove them when they start to color very lightly. They’ll continue to bake even after you take them out.
