Oats
To begin with, I recommend using rolled oats instead of quick oats for a chewier cookie.
Raisins
You can use any dried raisins of your choice. If you have large size dried raisins chop them to a small size.
Time: 1hr 30mins (including chilling)
Yield: 26 cookies approx
Ingredients
- 160g Rolled Oats
- 130g All-purpose Flour
- 75g Granulated Sugar
- 75g Brown Sugar
- 130g Raisins
- 120g Unsalted butter
- 1 Egg large
- ½tsp Baking Soda
- 1tsp Vanilla Extract
- ½tsp Salt
Method
Before you begin preparing your cookies, let me share with you a twist that will make your cookies even better. Soak your raisins in milk for a few hours in the refrigerator. This will make the raisins rehydrated and plumpy. As they bake in the oven the moisture in the raisins will mature more with flavor. You can skip this step but Trust me this step is worth it.
- Mix all dry ingredients( flour, baking soda, oats, salt ) in a bowl, give it a quick stir, and set aside.
- In a stand mixer with a paddle attached or in a bowl with a wooden spoon cream together butter, brown sugar, and granulated sugar. Mix for 2 minutes or until well combined.
- Add in egg and vanilla extract and mix until just incorporated. Scrape down the sides in between.
- Add in all dry ingredients and mix well. Try not to over mix. You just want to fold everything together.
- Add in soaked raisins and mix well. (If you don’t like raisins you can add anything else to the same amount.)
- Cover the cookie dough with plastic wrap and refrigerate for at least 40 minutes.
- Preheat your oven to 180°c. Prepare your baking tray and line with parchment paper or baking sheet.
- Using a tablespoon, scoop an equal amount of cookie dough, shape it into a ball, and place it on a prepared baking tray with at least 2 inches of space between each. Gently press the dough to flatten it but not too much. Your cookie will spread out and flatten as it bakes.
- Bake your cookies at 180°c for 12-13 minutes until the sides are turned golden and the center is set. After baking, remove the baking tray and let your cookies continue to bake on the leftover open heat of the tray for 3-4 mins. Transfer your cookies onto a wire rack and let them cool completely.
Store your oatmeal raisin cookies in an airtight container for up to a week in a cool place. You can prepare the oatmeal raisin dough and freeze it for up to a month. Whenever you feel like baking just transfer the cookie dough from the freezer to the refrigerator the night before.
If you are planning to freeze your cookie dough, place the dough on a plastic wrap, cover it and roll it into a log and freeze it. Just take a knife and cut a 1.5inch thick disk and bake.
Tips
- For crispier cookies, bake at 160°c for 20mins. The time can vary. Make sure you constantly keep checking.
- Every oven has different spots, you know your oven better. The middle or center rack is usually suitable. Rotate your tray if your oven heats more on one specific side.
- Use an ice cream scooper or a fruit scooper to scoop the cookie dough for equal size and quantity.
Enjoy this oatmeal raisin cookie with a glass of milk or have it for your breakfast. These cookies are perfect to carry at your workplace on a long working day.
