Ingredients for Gluten Free Gingerbread Cookies

Instead of the usual wheat flour these cookies use alternative flours like almond flour, rice flour, or oat flour, giving  them a nutty or rustic flavors.

Use a variety of gluten-free flours and starches that combine to create a light and soft texture. Common gluten-free flours include rice flour, tapioca flour and almond flour. Which can be readily available at your nearest grocery stores.

The essential ingredients for gluten free gingerbread cookies are:

  • Gluten-free flour blend: A good gluten-free flour blend will provide the right balance of protein, fiber, and starch for chewy, flavorful cookies.
  • Ginger: Ginger is the key ingredient in ginger cookies, so be sure to use fresh, grated ginger.
  • Brown sugar: Brown sugar adds sweetness and moisture to the cookies.
  • Butter: Butter gives the cookies their richness and flavor.
  • Eggs: Eggs help bind the cookies together.

In addition to using the right flours, gluten-free flours can be more absorbent than wheat flour, so it’s important to measure them out accurately as possible. You should also mix the ingredients carefully to avoid the formation of gluten. For which, avoid over mixing, only mix until everything is completely incorporated.

Substituting Regular Flour with Gluten-Free Flours

When substituting gluten-free flours in recipes, you’ll need to make some adjustments. Here are a few tips:

– Use a gluten-free flour blend that is suitable for baking.

– Add an extra egg yolk to help bind the dough.

– Use xanthan gum or guar gum to add texture to the cookies. (optional) (Read Instructions on the package to use ) *( Both guar gum and xanthan gum plant based and are vegan and gluten-free, however use only if it suits you )

– Reduce the amount of liquid in the recipe by about 10%.

-Bake the cookies for a few minutes longer than usual.

How to make Gluten Free Gingerbread Cookies? Step by Step

Step 1: First, preheat your oven to 350°F (175°C) and gather everything you need.

Step 2: Mix your dry ingredients. Whisk the gluten-free all-purpose flour, ground ginger, ground cinnamon, ground nutmeg, ground cloves, baking soda, and salt in a bowl. Put this aside.

Step 3: Cream the softened butter and brown sugar until they’re fluffy. You can use an electric mixer and a big bowl for this.

Step 4: Add the molasses and egg to the creamy mixture. Mix everything until it’s combined. It’s okay if it looks a bit lumpy– that’s normal.

Step 5:  Now, combine the wet and dry ingredients. Gradually add the dry mix to the wet one, stirring until they’re mixed. Be careful not to stir too much.

Step 6: Make the dough into a ball, cover it with plastic wrap, and put it in the fridge for an hour. Chilling the dough makes it easier to work with.

Step 7: Roll out the dough on a lightly floured surface to right thickness. Then, use gingerbread cookie cutters to make shapes. Put these shapes on a baking sheet covered with parchment paper on a baking tray.

Step 8: Put the baking tray in the oven and bake for around 10 to 12 minutes. Watch for the cookies to set and turn slightly golden around the edges.

Step 9:  When you take them out of the oven, wait a few minutes before moving them to a wire rack. This lets them cool down completely.

To create a gluten-free gingerbread house, follow these steps:

1. Preheat your oven to 350°F (175°C). ( Follow the same recipe for gluten free gingerbread cookies dough)

2. Roll out a chilled disk of dough between parchment paper to 1/4-inch thickness.

3. Cut out gingerbread house shapes and carefully place on a baking sheet lined with parchment paper.

4. Bake the shapes for 10-12 minutes, until the edges are lightly golden. Once baked, allow to cool completely on the baking sheet before transferring to a cooling rack.

5. Repeat the same process with the second disk of dough.

6. Prepare the frosting for the gingerbread house. Whisk together the powdered sugar, egg whites, and vanilla until the mixture is smooth and firm.

7. Brush the frosting along the edges to attach the walls and roof of the gingerbread house. Hold in place until set.

8. Let the structure dry for several hours or overnight.

9. Finally, decorate the gingerbread house with the remaining icing. Add icing for windows, doors and other decorations.
