Almond cookies are a beloved treat that combines the delicate sweetness of traditional cookies with the rich and nutty flavors of almonds.

How to make Almond Cookies ?
The process of making almond cookies is quite simple. The dough comes together easily with a combination of almond flour, butter, sugar, eggs, and a hint of vanilla extract. Once mixed, the dough is then shaped into small balls and placed on a baking sheet. As the cookies bake in the oven, where they transform into golden treasures, with a slightly crispy exterior and a soft, chewy interior. The irresistible aroma fills the air, inviting anticipation and making it nearly impossible to resist sneaking a sample before they have even cooled.

Ingredients:
- 1 cup (140g) almond flour
- 1/2 cup (113g) unsalted butter, softened**
- 1/2 cup (100g) granulated sugar
- 1/2 teaspoon almond extract
- 1/4 teaspoon vanilla extract
- 1 egg
- Sliced almonds for decoration (optional)
Instructions:
- In a mixing bowl, cream together the softened butter and sugar until its light and fluffy.
- Add the almond extract, vanilla extract, and egg to the butter-sugar mixture. Mix well until combined.
- Gradually add the almond flour to the mixture and stir until a dough forms. The dough should be slightly soft but manageable.
- Wrap the dough in a roll or log shape in plastic wrap and refrigerate for at least 1 hour to firm up.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cut small portions of dough and roll them into 1-inch balls. Place the balls onto the prepared baking sheet, leaving some space between each cookie.
- If desired, gently press a sliced almond onto the top of each cookie for decoration.
- Bake the cookies for about 12-15 minutes or until they turn golden brown around the edges.
- Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes. Then transfer them to a wire rack to cool completely.

Tips
- Its important to chill the dough so that it rests and firms up. Its easy to cut portions when the dough is chilled and firm.
- Do Not over mix after adding flour.
- Take out the cookies from the oven as soon as you see visible browning on the edges. The heat will continue to bake the cookies even after you take them out of the oven.
