I still remember the smell of it baking in the oven. It was always a special treat to enjoy it with her during the holidays.
H ow to make Yule log cake ?
To make the Yule Log Cake, follow these steps:
- Grease a jelly roll pan and line it with parchment paper. Make sure you have extra parchment paper that sticks out of the baking pan. (Don’t worry it will not burn in the oven, you will need this later for rolling the sponge.)
- In a mixing bowl, whip the eggs and granulated sugar until they become light and fluffy. Add the vanilla extract and stir it in.
- In a separate bowl, mix together the cocoa powder, flour, baking powder, salt and set aside.
- Gently fold the dry ingredients into the egg and sugar mixture until they are well combined. Do not over mix.
- Pour the batter into the prepared baking pan and bake for 10-12 minutes or until the cake springs back when lightly touched.
- Immediately turn the cake out onto a towel (dusted lightly with flour) and roll it up tightly. Allow the cake to cool completely while still rolled up.
- While the cake is cooling, prepare the filling by whipping the cream, powdered sugar, and vanilla extract until stiff peaks form.
- Once the cake has cooled, carefully unroll it and spread the whipped cream filling evenly over the top.
- Roll the cake back up without the towel and place it seam side down on a serving platter.
- To make the ganache frosting , add equal amounts of chocolate chips, and heavy cream in a saucepan, melt it on medium heat.

- Create bark lines. Use a fork to create bark lines all over the cake. Or, get crafty and use a toothpick or a skewer to make more intricate designs.
- Decorate the cake. Use chocolate shavings, candid cranberries or cherries, edible leaves, or any other Christmas-themed decorations that you like.
- If you want to get more crafty , you can also use a stencil to create a pattern on the cake.

Ingredients

- – 160g all-purpose flour

- – ¼ teaspoon salt
- – 120g granulated sugar
- – 6 large eggs
- – 1 teaspoon vanilla extract
- – 120ml vegetable oil
For the Filling:
- – 240 ml heavy cream
- – 40 gms powdered sugar
- – 5 ml 1 teaspoon vanilla extract
For the Chocolate Ganache Frosting:
- – 200g dark chocolate chopped
- – 200ml heavy cream
- – 1 teaspoon vanilla extract
Instructions
For the Cake:
- Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan or a baking sheet, then line it with parchment paper. Grease the parchment paper as well.
- In a mixing bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set this dry mixture aside.
- In a separate bowl, beat the eggs and granulated sugar together using an electric mixer on high speed until the mixture is thick and pale in color, gradually adding vegetable oil, about 5 minutes. Add the vanilla extract and mix to combine.
- Gradually fold the dry mixture into the egg mixture until just combined. Be gentle to avoid deflating the batter.
- Pour the batter into the prepared jelly roll pan, spreading it evenly to the edges.
- Bake in the preheated oven for 10-12 minutes or until the cake springs back when touched lightly.
- While the cake is still warm, carefully roll it up along the long edge with the parchment paper inside. Place it seam-side down on a wire rack to cool completely.
For the Filling:
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- For the Chocolate Ganache Frosting:
- In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until the chocolate is completely melted and the mixture is smooth. Alternatively, you can melt the chocolate and cream together in a double boiler on the stovetop.
Assembly:
- Carefully unroll the cooled cake and remove the parchment paper.
- Spread the whipped cream filling evenly over the cake.
- Gently roll the cake back up, using the parchment paper to help you. Place it seam-side down on your serving platter.
- Pour the prepared chocolate ganache over the rolled cake, allowing it to drip down the sides.
- Use a fork or a decorating comb to create a log-like texture on the ganache.
- Decorate the Yule log cake with powdered sugar, cocoa powder, and any festive decorations you like, such as meringue mushrooms or edible greenery.
- Refrigerate the cake for at least an hour to allow the ganache to set.
