- 230 g Semisweet chocolate, chopped
- 65 ml Heavy Cream or Double cream
- 65 ml Condensed Milk Optional but double the heavy cream if not using condensed milk.
- 35 g Unsalted Butter
- 1 tsp Vanilla extract
- Cocoa powder, for rolling
- Chopped nuts or sprinkles, for coating (optional)
Instructions
- Roughly chop the chocolate into small fine pieces, place them in a large bowl and set aside.
- In a saucepan, add the double cream, condensed milk, and butter. Heat the cream mix on a medium setting until it starts to simmer. Keep stirring the cream gently with a whisk to avoid burning on the sides.
- Over a medium heat , Bring the cream mixture to a boil, keep stirring to avoid burning.
- Take your cream mix off the heat once it starts to simmer. Pour the hot cream over the chocolate. Do not stir immediately, leave the mix for a minute, for all the chocolate to melt.
- With a whisk gently stir the chocolate and cream until it looks smooth and creamy.
- At this stage add in vanilla extract or any other flavorings. For flavoring, suggestions see above of this recipe.
- Cover the bowl with plastic wrap and refrigerate for about 2 hours or until the mixture is firm.
- Once the mixture is firm, use a spoon or a small scoop to portion out the truffle mixture.
- Roll each portion into a ball and place them on a baking sheet lined with parchment paper.
- Roll the truffles in cocoa powder, chopped nuts, or sprinkles to coat them.
- Place the coated truffles back in the refrigerator for about 15-20 minutes to set.
To shape your truffles
Line a tray with parchment paper.Lightly coat your palms with a neutral flavor oil. Dip a rounded spoon or a melon scoop in the chocolate ganache mix and shape them into smooth balls.Avoid shaping them for a long time, your palm heat will slowly melt the chocolate and turn them sticky.
Coating
Coat your truffles soon after you shape them. Roll them in cocoa powder or powdered sugar or simply dip them into melted chocolate of your choice.
