This moist Carrot Cake recipe is very delicious, tasty, and packed with flavor. This is one of my favorite carrot cake recipes because it is the best carrot cake recipe.
Carrots are naturally sweet and high in fiber. If you are a person who likes to get your groceries I’m pretty sure you’ll end up bagging more carrots during peak seasons. Whenever there are extra carrots in my house I look at my mom and we both know there will be carrot cake or ‘ gajar ka halwa ‘ for dessert. This easy carrot cake recipe is a no-brainer easy to assemble, and as delicious as it looks.
The cream cheese frosting on this carrot cake is just a perfect match made in heaven. The simple trick to preparing carrot cake is to measure all your ingredients and keep everything right in front of you. As this recipe requires fewer techniques and just mixing all together, it’s easier to bake with less hassle.
Time: 3hrs 20mins ( including cooling and assembling )
Yield: 2 (460g+460g) cakes
Important* Note: this recipe makes 2 cakes to layer on one another. Feel free to divide the recipe in half for single cake sponge.
**Avoid baking this whole recipe in one large cake pan. As the ingredients are heavy it will not cook all the way through.
Ingredients
- 280g all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- ½ tsp nutmeg ( roughly grated )
- 2 tsp vanilla essence
- 300g grated carrots
- 160ml neutral vegetable oil ( canola oil preferred)
- 4 medium-size eggs ( at room temperature)
- 300g powdered sugar ( if brown sugar available then add half to white sugar 150g +150g )
For cream cheese frosting
- 220g cream cheese ( room temperature )
- 110g butter unsalted ( room temperature )
- 220g powdered sugar
- 1tsp vanilla essence
Method
For carrot cake
- In a mixing bowl, whisk together flour, baking powder, baking soda, nutmeg, and salt until well combined. Set aside.
- Preheat oven to 180°c. Grease two 9 inch round cake pans with butter or cooking spray and lines them with parchment paper at the bottom. Set aside.
- In a separate bowl mix together all the wet ingredients, oil, eggs, powdered sugar, vanilla essence. Whisk until everything is well combined.
- Add in grated carrots and mix well. Make sure there are no lumps.
- Add all dry ingredients ( flour, baking powder, baking soda, salt, nutmeg) to the wet mix. Fold and mix with a rubber spatula. Mix until everything looks combined well. Do not over mix.
- Pour the batter into the cake pans and spread evenly. Bake it at 180°c for 25-30 minutes. Until the center of the cake is no longer wobbly insert a toothpick at the center that comes out clean.
- Transfer the cake into a wire rack for cooling for 30-40 minutes.
For cream cheese frosting
- In a mixing bowl of a stand mixer with a paddle attachment, beat the creme cheese until smooth. Or you can use a whisk and beat by hand.
- Add in butter and creme until everything is well combined and looks smooth texture. Add in powdered sugar and vanilla and continue mixing until all visible lumps are gone. Keep refrigerated until it’s ready for use.
Assembling
- Once completely cooled, place your carrot cake on a cake stand and Level the cake tops with a knife. Dont throw away the cake tops. Keep them aside for making crumble. Put a dollop of cream cheese on one cake, top side facing down and evenly spread it over the cake.
- Place second cake over the layer, top side facing down and cover with frosting evenly. Apply the remaining frosting on the sides.
- Roughly break the cake tops and gently rub in your hands to crumble. Spread the crumble over the top and sides of the cake.
Tips
- You can use cinnamon or ginger powder to elevate the flavors.
- If you love nuts, raisins and walnuts go well with this carrot cake.
- Top the cake with candid baby carrots, pecan nuts or any other toppings of your choice.
