Make these soft bread rolls to accompany your dinner or breakfast. Light, buttery and fluffy, these soft bread rolls are easy to make and prepare in a mixer or by hand.
Bread rolls are also known as dinner rolls because are perfect to accompany any family dinner. This is my favorite buttery bread rolls recipe, and it tastes so amazing when served fresh warm out of the oven. The light buttery aroma gives it a rich taste. This soft bread rolls recipe is easy to make because it has minimal ingredients and is very easy to prepare by hand or even in a stand mixer.
This bread roll recipe doesn’t require complicated techniques. Although the proofing time is a bit lengthy, it is worth it.
To make bread rolls, you need to add the ingredients together, mix them, knead the dough, proof it, shape and proof it again before baking.This gives me enough time to prepare dinner or just relax during the holidays. This makes this bread roll recipe perfect to prepare it ahead for the weekends or dinners.
Butter
Butter makes everything better. Do not feel shy to add butter to any pieces of bread. It takes your bread to a whole new level. If you are using salted butter, adjust the amount of salt you add in later. Higher the quality of butter you use, the richer taste you’ll get. I always love to use Lupark butter or Amul butter. (this is not a brand endorsement, just my own and personal suggestion)
Yeast
Here in this bread roll recipe, we are using fresh dry yeast because it is more controllable than fresh yeast. You can use any dry yeast locally available. Make sure your yeast is fresh. Add yeast in lukewarm water, if it bubbles you’re good to use. If it doesn’t your yeast is probably dead. Discard and use a new one.

Time: 1hr30mins (prep 15mins + 1hr proofing +15 mins baking )
Ingredients
- 220ml Water (lukewarm)
- 2tbsp Butter unsalted (melted)
- 100ml Milk (room temperature)
- 2tbsp Sugar
- 1tbsp Dry yeast
- 470g All-purpose flour
- 1tsp Salt
Method
- Preheat your oven to 200°c. Spray a baking tray with cooking oil or grease with cooking oil and set aside for smooth individual bread rolls. Or use a 13-14inch baking pan for pull-apart bread rolls.
- In a mixing bowl of a stand mixer, add sugar, water, milk, butter. Mix until the sugar has dissolved and everything is combined.
- Spread yeast on the liquid mix. And mix it using a fork or a spoon. Set aside for 6-7 minutes until it’s foamy and starts bubbling. (If your yeast doesn’t foam or bubble, it is probably dead. Make sure you use a fresh dry yeast)
- Attach a dough hook to your mixer. (See below on how to knead the dough by hand without using a mixer )
- Add the flour and salt to the wet mix. And knead the dough at a slow speed until combined. Once the dough is combined, increase the speed to medium and continue to knead for 4-5 minutes. Be patient, the dough may be sticky in the beginning and come together as you knead. If your dough is still sticky add little flour and knead well. The sides of the bowl should come clean and the dough surface should look smooth.
- Lightly brush the dough with oil and cover the dough with a damp cloth or a cling foil in the same bowl. Leave the dough to rise for 30 minutes.
- With the back of your palm, gently punch the dough to degas it. Do not apply hard pressure. The point here is to remove the gas from the dough to proof it again later. This method of proofing makes your bread fluffy and soft.
- Cut small 35-40 grams equal pieces of dough. Gently shape the pieces in a circular motion in your palms to create dough balls. Place the balls on a prepared baking tray or a baking pan. If you want pull apart bread rolls, place them closely in a baking pan. If you want separate rolls, place the dough balls 2 inches away from each other on baking tray.
- Cover the shaped dough with a damp cloth and leave it to proof for another 20 minutes until it’s risen.
- Lightly brush the rolls with water and milk mixture. Top the rolls with sesame seeds or leave it plain. Bake the bread rolls for 15 minutes or until the tops are golden brown. After baking lightly brush the bread rolls with butter while they are warm.
- Serve warm and enjoy with your favourite gravy or soup or simply have it as a breakfast bread.
Knead by hand
To knead the dough by hand, if you don’t have a stand mixer, follow the same steps mentioned up to steps 1,2 & 3. Mix the dough thoroughly until combined. Dust your kitchen platform or a table. Transfer the dough onto the platform. Knead the dough for 6-7 mins until the dough is smooth. Don’t add extra flour even if the dough is sticky, it will come together as you knead. If only the dough is too sticky then add little flour and knead well.
Herbs bread rolls
You can also add different herbs in this bread roll recipe. Try oregano and basil or any other herbs of your choice.
Garlic bread rolls
To make garlicky flavored soft bread rolls, add 2 tablespoon of minced garlic to this recipe. Brush the rolls with garlic butter after baking.
Tips
- Don’t skip the proofing times. This is essential for your bread to mature gluten making your bread soft. Depending on your geographical location proofing timing may vary. For a person living in a hot or humid location, the dough will rise faster than someone living in ca older location.
- If you don’t have a scale to measure dough weight don’t worry about the size. They all bake equally. One lucky person would be delighted.
