Ingredients
  

  • 500 g All-Purpose Flour
  • 50 g Granulated Sugar
  • 2 tsp Active Dry yeast
  • ½ tsp Salt
  • 2 Large Eggs
  • 2 Egg Yolks
  • 130 g Unsalted Butter Softened
  • 70 ml Milk

For egg wash

  • 1 Egg
  • ½ tsp Honey
  • 2 tbsp Milk

Instructions
 

  • In a large mixing bowl, combine flour, sugar, yeast and salt. Mix well.
  • Make a well in the center of the dry ingredients and add the eggs, egg yolks, softened butter and milk. Mix everything until a dough is formed.
  • Transfer the dough to a floured surface and knead for about 10 minutes or in stand mixer with attached dough hook on medium speed, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel and let rise in a warm place for about 1 hour, or until doubled in size.
  • After the dough has risen, gently press it down to release the air. Divide the dough into equal portions and shape them into balls or the desired brioche shape. (Check below for more instructions on various brioche bread shapes )
  • Place the shaped dough on a baking sheet lined with parchment paper, leaving some space between each piece. Cover with a kitchen towel and let rise again for about 1 hour, or until doubled in size.
  • Meanwhile, preheat your oven to 350°F (175°C).
  • In a small bowl, beat an egg, honey and milk. Brush the risen dough with the beaten egg wash to give it a shiny glaze.
  • Bake the brioche in the preheated oven for about 20-25 minutes, or until they turn golden brown. You can also tap the bottom of the bread to check for a hollow sound, which indicates they are fully baked.
