How to bake Artisan Multigrain Bread ?

Unlike other bread recipes, this bread requires an additional method to soak the grains overnight, then mixed with rest of the ingredients before kneading and baking. To bake this bread, mix well the wet ingredients , followed by gradually adding dry ingredients while roughly kneading. Then adding the overnight soaked grains to the dough and further kneading until mixed well. Once the dough is kneaded well , cut into equal parts , make a round ball and cover with a damp cloth and proof it for about 30~40 mins. Shape the dough into long log , spray water and grains on top. Leave it for final proofing before baking. Enjoy!

Ingredients

For soaking grains:

  1. Flax seeds – 25g
  2. Pumpkin seeds – 25g
  3. Sesame seeds – 25g
  4. Sunflower seeds – 25g
  5. Water- 140ml (or just enough to soak the seeds)

For the dough:

  1. Flour – 160g
  2. Wholewheat flour – 160g
  3. Yeast – 5g
  4. Salt – 4g
  5. Water – 350ml
  6. Butter – 40g
  7. Soaked grains + some for toppings.

Instructions

  1. Begin by mixing the two types of flour together in a mixing bowl.
  2. Add the yeast and salt to the flour and mix them all together.
  3. Add in the soaked grains and mix them with the flour mixture.
  4. Melt the butter and add it to the mixing bowl.
  5. Add in the water and mix everything together until the dough forms.
  6. Knead the dough for at least 10 minutes to make sure it is well mixed and elastic.
  7. Place the dough in a greased bowl and cover it with a clean towel. Let it rise in a warm place for about an hour or until it has doubled in size.
  8. Preheat the oven to 200°C (400°F).
  9. Punch down the dough and knead it again briefly. Divide it into two equal parts.
  10. Shape each piece of dough into a loaf shape and place them into greased loaf pans.
  11. Add some of the soaked grains on top of the loaves for extra texture and flavor.
  12. Cover the loaves with a towel and let them rise for another 20 minutes.
  13. Bake the loaves in the preheated oven for about 30-35 minutes, or until they are golden brown and sound hollow when tapped.
  14. Remove the loaves from the oven and let them cool for a few minutes before slicing and serving.
